
Miguel’s birthday this year was super simple! It was just my parents and brothers, there were 16 of us at the table then, I miss my sister and nieces, otherwise there would have been 20!
The birthday boy chose the menu! A simple starter to snack on, chicken curry, and egg and almond cake to sing happy birthday to!
This afternoon, I ended up making skyr and strawberries, not only because I used up all the ingredients I had at home, but because another dessert always looks delicious on the table.
Of course, this is a recipe worth sharing!
Ingredients for 1 Pie
Tart Base:
225g flour
150 g cold butter
75g sugar
filling
200g – 250g natural scree
200g cream cheese
1 lemon
150 g powdered sugar
300g strawberries
decorative mint
preparation:
Start by preparing the pie base.
Using a food processor or by hand, mix the flour with the diced butter and sugar first until coarse crumbs form and then form a homogeneous dough.
Line a third with this dough with a removable bottom. No need to stretch with a rolling pin, just use your hands to line the bottom and sides of the tart.
Then cook the dough in an oven preheated to 180°C for about 25 minutes or until golden brown on the bottom.
Remove and let cool completely. (If the dough rises in the oven, press it down with a washed cloth as soon as it comes out of the oven. Be careful not to get burned.)
Once the base has cooled completely, carefully unmold it and place it on a serving plate.
Then prepare the filling. In a bowl, combine cream cheese, skyr, powdered sugar, and a little lemon juice and zest. Mix well and cover the completely cooled tart base.
Wash the strawberries, dry well and divide into pieces. Then cover the entire tart with strawberries and garnish with a few mint leaves. Refrigerate until serving.
