The weekend was great, spent with friends at a friend’s house in Alentejo. There was lots of conversation, laughter, and lots of food! It was about putting your feet in the sand and watching the sunset. But with the coat on. And it felt like life was taking care of us, bringing us people we never imagined we were missing!
I brought from the kitchen a simple orange cake (cake with whole oranges) and a delicious tart with dried fruit and seeds, which everyone raved about! The recipe is here
ingredient:
large quantity
50g butter
130g flour
50g sugar
1 egg
1/2 teaspoon baking powder
1 pinch of salt
applied area
150 g almonds with skin
50g cashew nuts
25g white sesame seeds
25g black sesame seeds
20 g poppy seeds
100g sugar
100 g butter
50ml milk
preparation:
Place the butter, flour, sugar, eggs, yeast, and salt in a bowl and knead well until a smooth, homogeneous dough is formed. (Alternatively, place everything in a food processor and blend.) Prick the removable bottoms, about 24cm in diameter, with a fork and place in a preheated 180°C oven for about 15 minutes.
Meanwhile, place the almonds, cashews and seeds in a chopper/blender/kitchen robot and process until you get a sort of coarse “bread crumbs”. Place the mixture in a small saucepan, add the butter, sugar and milk and cook over low heat for about 10 minutes. Continue stirring until everything is dissolved and homogeneous.
Then pour this mixture over the previously cooked dough and bake for another 25 minutes until the top is golden and caramelized.
Unmold while hot and serve cold.
